- Cucumber Sandwiches

- 1 Cucmber, Peeled & Sliced as thin as possible
- 1/4 cup vegetable oil
- 1/4 cup vinigar
- Butter, NOT Margirine
- Slices of brown bread w/the crusts cut off (white can be substitued)

- Mix oil and vinigar in a medium bowl. Place cucumber slices in marinade
- and soak for 1/2 an hour. Lightly butter two slices of bread. Drain
- cucumber slices and place in a double layer between bread. Cut sandwhich
- into 4 quarters and serve.
